What is a polvorone?
Polvorones (which happens to be the name for like 4 different cookies) are essentially Mexico’s version of the sugar cookie but colored with yellow or pink food coloring. The cookies are crispy on the outside, but soft and chewy in the middle. I asked Instagram which color I should make them for this post. Everyone suggested different colors so I made almost all of the rainbow.
About four batches were made before I found the perfect cookie. I wanted cookies that were crunchy on the outside but soft and chewy inside. I baked cookies at four temperatures (350, 350 and 375), to see which one gave me the best results. I used equal amounts of shortening and margarine at first, but I soon discovered that I could get lighter cookies with deep cracks by using all shortening.

Now that it is starting to get colder and raining more often, this is a recipe I’m going to be making pretty often. Get your kids involved if you have them! Make sure to divide the dough into bowls. Let your kids add their favorite colors and knead the dough. Finally, let them help you roll them with sugar.
If you happen to make these, don’t forget to tag me and send me pictures!
